This year we haven’t managed to buy any panettoni or pandori for Christmas so I will be baking them myself. We are all putting on some weight because I’m testing recipes and we need to eat all the experiments. My first attempt was the most successful one so far (from BBC good food). Basically a Panettone is a cake done with yeast and bread flour. Today I found a recipe from Artusi called Panettone Marietta. Artusi says that he called it like this because it was Marietta who taught it to him. He goes on to say that he recommends this recipe because it is far better than the Panettonis from Milan and much quicker to make. I beg to differ. It is the first time I have been disappointed by Artusi but I should have known better. The ingredients are what you would expect when baking a a basic cake like a Madeira cake. Eggs, butter, sugar, flour (normal, not strong bread flour) and baking powder (not yeast) and no need for proofing. I don’t know why I was surprised when the result was a cake and not a panettone. It’s a perfectly nice cake but distracting from my mission which is to bake a perfect panettone.
